Emile Henry is one of the largest ceramic manufacturers in Europe and was founded in 1850 by M. Jacques Henry, a potter by trade, who operated a small workshop in Marcigny, southern Burgundy. Emile Henry uses Burgundy clay in the manufacturing process. The clay from the Burgundy region of France has unique mineral and molecular properties that contribute to form a material that conducts, distributes and retains cooking heat more efficiently than most materials. Emile Henry oven-to-tableware pieces are easy to clean, dishwasher safe and durable for everyday use.

The Emile Henry pizza stone can withstand high oven temperatures and can be used in conventional and convection ovens and under the broiler. It can be used on gas and charcoal grills as well as over an open fire. The stone turns a standard BBQ into a pizza oven. The micro-crazed glaze contributes to a well-baked, crispy crust. Cut directly on the stone without damaging or scratching the surface. It has a generous diameter of 14 inches which holds a variety of pizza sizes, including the traditional 12 inch.

I was given an Emile Henry Pizza Stone, purchased from the store, and I love it for homemade pizza. Alongside the pizza stone, I have come to love the Epicurean Pizza Peel. A little cornmeal on the peel and the stone helps the pizza move on and off easily, like little ball bearings. I also find the edge of the peel to be great for slipping under the pizza crust. — Alison
