From the Latin Triticum, which means "the need to rub or thresh the grains to remove the outer husks," farro is an unhybridized ancestor of modern durum wheat. This ancient heirloom grain has long been cherished for its deep, nutty flavour, wonderfully al dente texture, and it high nutritional value.

Use it in soups, salads, and as a replacement for rice in risotto or as a side.
